A LATE HARVEST
2013 returns to the glorious steps of the late harvests. After a cold and wet winter followed by a very cool and rainy spring, the vineyard began its growth a fortnight late. The hot and dry summer, with the greatest exposure to the sun ever recorded in Champagne, was particularly beneficial for the quality of the grapes. The early September rains soon gave way to the wind, which kept the bunches healthy until harvesting. The harvest lasted from 28 September to 15 October, with grapes that revealed a promising balance between acidity and roundness.

ELEGANT CLARITY
The creation of the Vintage 2013 reveals the echo of pinot noirs and chardonnay, between acidity and body. The precise, elegant and tactile bouquet blossoms into an extremely delicate aromatic and chypre interweaving, which wraps around three nuances: first citrus fruits, then more vegetal notes and finally spicy accents. This precision reveals a simple and clear-cut elegance in which the wine, after an ethereal attack, amplifies and then blossoms, before abandoning itself to an ineffable sensation of clarity.

NOSE AND PALATE

BALANCE OF ACIDITY AND ROUNDNESS
The nose is delicate and reveals itself with colorful touches. The green of eucalyptus, mint and vetiver. The yellow-orange of mirabelle, apricot and orange blossom. The brown of pepper, cardamom and licorice stick. The silver of iodine and toasted aromas. The palate is elegant, clean and precise. The attack is enveloping and ethereal. Then, the texture of the wine, fine and silky, is amplified. On the finish, it releases a saline, savory sensation, which reveals a profound coherence.

PAIRINGS
When looking at the Vintage 2013 from a general point of view, the acids reveal the character and intensity of the wine. Fruits with high acidity, citrus fruits, green tomatoes, sorrel or rhubarb are an ideal match. If you choose to embrace a deeper vision of food and wine pairing, the energy and intensity of Dom Pérignon Vintage 2013 can be combined with fleshy and firm textures in association with iodized and acidic elements.
