The Pinot Nero grapes of our Pas Dosé are cultivated with Guyot and grow between 750 and 1,150 meters.

The vineyards are found on mixed dolomite and porphyry soils, with southern and south-western exposure.

The grapes are partly crushed whole, while the remaining part is de-stemmed and then pressed.

The first aging takes place only in steel for six months and in the spring following the harvest the bottling takes place (draw).

Afterwards, the wine remains on the lees for about four years.

Only six months before the sale takes place disgorgement.

Pas Dosé is a sparkling wine with a fascinating color, fine and persistent perlage.

This wine goes well with a variety of dishes, so what you like.

Given that it is pure Pinot Noir, it can never be a wine for everyone, but in particular for those who love this grape.
