VINIFICATION TECHNIQUE, SPUMA AND AFFINATION
The vineyards are bred to obtain sparkling grapes. In the vintage, manual harvesting of selected grapes is done only in the morning, after the breeze from the northeast has dried up the thin moisture of night. At the delicate crunching of unbroken grapes, the natural decanting of the must is bloomed for a whole night. The first fermentation, at 14 ° C, takes place in steel and part in barriques. In the spring following, the yellow ribolls are referred to three lunar cycles in large horizontal autoclaves at 12 ° C, while another 28 months are needed to refine sur lies. Bottling follows complete absence of oxidation.
Eight more months of bottle are needed to complete the aging process.
Finally, the bottles are manually packaged and hidden under an original yellow veil almost to preserve all the love that wise hands have been able to create in three and a half years of work.
WINE
Brilliant straw yellow color with vague greenish reverberations, sparkling, finer and persistent effervescence.
Delicate and delicate aromatic delicacy, with scents that recall walnut fishing, white figs, green apple and blend with velvety notes and minerals.
It is fresh in the mouth, rich in texture, with infinite nuances of even citrus and long aromatic persistence.
