VINIFICATION
Destemming

Maceration: 21 days, combined with punching down and delestage

Fermentation vessel: stainless steel fermentation vats

Fermentation temperature: 18 ÷ 30 °C

Yeasts: selected

Duration of fermentation: 15 days

Malolactic fermentation: complete

Elevage: 14 months in barrique, then rest for 1 month in stainless steel tanks until natural clarification is obtained

Bottling: 23 July 2021
