The Cabochon is the most prestigious Franciacorta wine among Monte Rossa production.
It has been created in 1985 researching the most accurate selection of cru from the Hill of Monte Rossa and a new vinification system introducing the “barriques” for the first fermentation of the must.
The great satisfaction was that the obtained wine imposed itself among the most important labels of the Company.
ORGANOLEPTIC CHARACTERISTICS
A golden yellow wine with a fine and persistent perlage.
To the nose is precise with the scent of blond tobacco, mint, eucalyptus, almond, pralines, linden tea. In the mouth it is balanced, with good structure with honey notes, excellent balance between acidity and structure.
Recall to citrus fruits in particular to grapefruit.

GROUND STRUCTURE: Glacial-Morainique
USED VINES: 70% of Chardonnay and 30% of Black Pinot
CUVÉE 100% of wines obtained from Cru
GROWING SYSTEM: “Cordon Royat” at 70 cm from the floor
SELECTION OF GRAPES: On the vines by manual grap harvesting in boxes
VINIFICATION: Soft pressing of grapes selecting their best part for no more than 48% of yield. Each cru is vinified in purity
FERMENTATION: in oak barrelshaving a capacity of 250 liters between September and February
REFINING IN BOTTLE: min. 42 months
