Very different given their considerable complexity of formation. On the steeper and more eroded slopes they are thin, with accumulation of organic matter on the surface in direct contact with the calcareous substrate. More stable situations with deep clay are found in evolved areas, on fluvioglacial deposits with moderately deep soils.

winemaking

Charmat method: crushing, cooling of the must and fermentation in steel tanks at a controlled temperature. Second fermentation in autoclave.

sensory notes

Straw yellow, brilliant, the nose reveals notes of apple, pear and citrus fruits that are found in the mouth giving sensations of flavor and freshness. A very creamy and delicate Brut, with a fine and persistent bubble.

Ideal for an aperitif, its marked creaminess also allows it to excel with first courses based on fish, fried food, vegetables and second courses of white meat.
