Refinement
A small fraction of the must ferments and ages in small French oak barrels.
Vinification
Careful care of the grapes, very soft pressing with the use of free-run juice only. Cooling to 10-12°C with natural decantation. Fermentation at a controlled temperature of 16-17°C for 25-30 days.
Pairings
Fish-based appetizers, potato culurgiones with mint, risotto alla marinara, risotto with artichokes, linguine allo scoglio, stewed and grilled fish, white meats, medium-aged cheeses.
