XO means "extra old" and is the name reserved for the best spirits, provided they are aged in wood for at least six years, reaching optimal ripeness. XO brandy Sibona rests far beyond the six years in small oak casks in the historic cellars of the distillery. The distillate is a blend of grape pomace from the best-known, such as varieties of nebbiolo and barbera of the Langhe and Roero.
