Sipping the bubbles of OTTOSOLDI is a unique experience, really to try!
A metodo classico which presents itself to winelovers of rare wines with a great personality, a clear identity ascribable to the GAVI terroir; the extra brut of OTTOSOLDI will surprise you with its elegance and complexity.
Born from a native vine variety, the CORTESE, known for its pronounced acid hints that together with the minerality, given by the calcareous - marly soil, typical for the area, create a fresh long life wine of great structure. The vineyard is taken care of with great passion and precision by qualified personnel that respect completely the rhythm of nature. The harvest, usually expected in the first days of September, is carried out manually in order to guarantee an attentive selection of the grapes. All this allows to give life to a GAVI DOCG blanc de blancs of a very high quality produced in limited numbered bottles according to the traditional procedure of the metodo classico.
By letting it rest on the yeast for at least 36 months it obtains its unique characteristics of complexity.
