From the midnight blue of the "Blauburgunder" grapes to the shiny bronze reflections of the finished wine.

The Blauen Blanc de Noirs is a Trentodoc Extra Brut, vinified in white from hand-selected Pinot Noir grapes and aged for 72 months on the lees in the bottle.

DÒS OF THE CEDAR
The Pinot Noir grapes come from a single vineyard, called Dòs dei Cedri, from over 40-year-old vines trained with the Trentino pergola system.

It is a particularly suitable land, located near Maso Warth, on the hills of Trento, 350m above sea level, made up of Dolomia stone, which gives the wine great freshness and sapidity.

METHOD
AGING FOR 72 MONTHS
After the delivery of the grapes we carry out the soft pressing with selection of the must; we vinify the Pinot Noir in steel, we let the wine mature for 9 months in the tanks, before letting it rest in the bottle for a long period of aging (72 months).

At the basis of our oenological project is the desire to enhance the characteristics of the Trentino terroir, while maintaining the organoleptic properties typical of such a prized vine unaltered. Trentodoc Blanc de Noirs is the result of meticulous and tireless dedication, both in the vineyard and in the long years of aging in the cellar.

CHARACTERISTICS
ETHEREAL
Blauen, playing on the harmonious contrast between the dark blue purplish tones of the Blauburgunder grape (German term for Pinot Noir) and the bronze reflections of the wine, recalls the long winemaking process, evoking the stars in a night sky, light in the dark, Blanc de Noirs.

The perlage is fine, with an intense straw yellow color with bronze reflections. Fruity on the nose with smoky notes, nuances of toasted hazelnuts and hints of evolutionary notes. On the palate it is fresh, dry and persistent.
