Harvest: Manual in crates starting from the second week of September
Vinification: Addition of dry ice and low temperature fermentation for about 15 days. The wine remains on the lees until January, followed by assembly.
Aging: Steel
Aged: In bottle for three months
Tasting notes: Wine with a refined and persistent bouquet where iodized mineral notes blend well with aromas of white and yellow pulp fruit, floral nuances, mimosa and chamomile in particular and fresh notes that refer to Mediterranean aromatic herbs. On the palate it is fresh and savory, vibrant with acidity and rich in fruit, the finish is long and tonic, embellished with a vibrant citrus note.
