Tasting notes
Colour: straw yellow with golden hues. Pleasant effervescence with fine and persistent perlage.

Aroma: delicate scent of white flowers and delicate citrus notes.

Taste: sapid, fresh and persistent with good acidity in harmony with small and elegant bubbles.

Technical notes
The grapes are harvested manually in 20 kg boxes and stored at 10°C in a cold room before soft pressing. The flower must (45% yield) is fermented in steel at a controlled temperature and the base wine remains on the fine fermentation lees until drafted the spring following the harvest.

Permanence on the lees: 60 months
Refinement: at least 6 months from disgorgement
Dosage: Not dosed
