ALIGOTÉ, THE HISTORY
Present since the 17th century in Burgundy, Aligoté is a native grape variety of the region. Planted from Chablis to the Mâconnais, it is also used for the production of Bourgogne-Aligoté, AOC since 1937. More recently, in 1997, under the impetus of Aubert de Villaine, the wines (from Bouzeron) in the Côte Chalonnaise also obtained the AOC extension. Today it is grown on 1,500 hectares in the departments of Yonne, Côte-d'Or and Saône-et-Loire.
ALIGOTÉ, THE GRAPE
A white grape that has recently enjoyed considerable success above all for its historicity, before phylloxera it accompanied Chardonnay with Corton-Charlemagne and Montrachet. An eclectic vine, capable of adapting very easily to different types of soil: it gives rise to fresh and delicate wines, with good aging potential. It releases aromas of white fruit, white flowers, peach, lemon, lime blossom, acacia, hazelnut and green apple, sometimes even citrus. The taste has iodized and saline notes accompanied by a fruity acidity that gives it a good persistence.
Characteristics
Aligoté represents 6% of the entire wine production of Burgundy, it is grown in generally calcareous soils, often combined with marl or clay. It fits in hilly locations and at higher altitudes.

Vinification:
after crushing and decantation, the vinification takes place in stainless steel. AGING POTENTIAL: 1/3 years
Tasting Notes:
Golden in color with greenish reflections, the nose releases aromas of flowers and fern. The mouth is lively, releases acidity and a persistent aromatic finesse. It is a dry and fruity wine.
