Grapes: 100% Chardonnay.

The cuvèe is obtained by blending exclusively Chardonnay-based wines with fermentation and aging partly in barrique and partly in steel.

It differs from other Blanc de Blancs Cavalleri for a contained dosage of the liqueur de tirage which allows to obtain a product with a more moderate pressure.

The term Satèn, the equivalent of the French word Cremant, is reserved exclusively for Franciacorta Docg, and indicates products with a strong creamy taste sensation.

This makes Satèn Cavalleri our Franciacorta more suitable for use "throughout the meal".

First year of production: 1990. Number of bottles produced: 26,000 of 0.75 lt.

Harvest period: From 18 to 25 August

Average production in the vineyard: 80 quintals / hectare

Vinification yield: 50% (50 liters of wine from each quintal of grapes).

Cuvée: Chardonnay (100%)

Fermentation and aging in steel for 55%, in large oak barrels for 35% and in old barriques for 10%.

Aging on the lees: Minimum 30 months.

Remuage: 4 weeks manual.
