Winemaking: The grapes are carefully destemmed and crushed. The fermentation takes place with maceration on the skins at controlled temperature in stainless steel containers. Run frequent pumping, for a period of about three weeks, in order to extract color and aromas from the skins. Wine is then racked.
Ageing: Maturation for twelve months in steel and small French oak barrels. The bottled wine is normally aged in temperature-controlled rooms for about four months.
Sensory characteristics:
Color: ruby red with garnet.
Nose: elegant, sensual, penetrating, with hints of black cherry, raspberry, pomegranate, wild rose and white pepper integrated cinnamon, tamarind and fern with hints of cocoa, cherries and strawberries.
Taste: smooth, vibrant, fresh, long; the elegant tannins are driven by good acidity that makes it smooth and persistent; the aromatic return is intriguing, intense and persistent.
Pairings: Game, stews and roasts; medium-aged cheeses.
