AVERAGE YIELD PER HECTARE 7,400 kilograms of grapes, equivalent to 4,300 litres of wine (must-to-fruit ratio 58%).
VINIFICATION Pinero is obtained from meticulously selected grapes skilfully vinified in full compliance with the Metodo Ca’ del Bosco. Grapes from four superior vineyards are picked, using small cases, and then graded and chilled. Each bunch is selected by experienced cellar staff before it visits our “berry spa”, an exclusive air-bubble bunch-washing system that incorporates three soaking vats and a drying tunnel. The bunches are then transported over the maceration vat where destemming causes the berries to fall into the vat by force of gravity. This avoids the traditional pumping systems that damage the skins and cause unwanted herbaceous aromas. Alcoholic fermentation and maceration took 17 days, with careful monitoring of temperature and punch-downs. Pump-overs were performed daily using a pair of lift tanks in which the wine, drawn off from the bottom of the vat, was transferred by gravity. The wine was lifted by the flying tanks and poured into the high-capacity vat to submerge the cap. There is no more natural or effective way of delicately extracting colour and tannins. The still-warm wine was then racked into small oak casks, half of them new, made from selected wood seasoned for at least three years. Maturation lasted for a total of 15 months, after which the wine was bottled naturally by gravity flow. Innovative bottling systems ensure that the wine is not subjected to oxidative stress or disturbance, and that no further sulphites need to be added. Integrity and healthfulness are guaranteed. Finally, every bottle bears an individual marking to ensure its traceability.
