MATURITY IN HARMONY WITH LIGHTNESS

Doppio Erre Di (Double RD) stands for Ritardato Degorgement Recentemente Degorgiato (delayed disgorgement, recently disgorged), in the sense that the disgorgement (i.e. the final stage of production in the Franciacorta method) after long months of ageing is intentionally delayed and that the bottles are delivered shortly after they have been disgorged (as indicated on the label) to guarantee the maximum freshness. Produced using only the prime must from the first pressing, a part of the base wine is fermented in barriques. The base wine is aged for at least 30 months in contact with the yeasts.

Sublime, balanced and smooth. A radiant wine with rich aromas that reawakens the senses for an irresistible experience.

ORGANOLEPTIC CHARACTERISTICS

Bright appearance, vivid straw colour with very slight coppery specks of gold; the aromas emerge immediately to show elegance and finesse, lime-tree and hawthorn blossom accompany white ripe fruits, the Abate pear, acacia honey and white pepper, followed by warmer aromas of blond caramel and sugared almond. To the palate the particular production process highlights creaminess and ripe fruit, no roughness blocking drinkability, soft with a very pleasant salty finale

COMBINATIONS RECOMMENDED BY NICOLA BONERA

To be drunk well-chilled in a Franciacorta wine-glass, paired with medium-textured food, particularly fish- or vegetable-based appetisers.
Sebino sardine and potato pie.
