VITIGNO Passerina monovarietal.

AVERAGE ALTITUDE 200-300 meters above-sea-level.

SOIL TYPE Medium texture tending to sandy.

TRELLISING SYSTEM Guyot.

DENSITY PER HECTARE 5.000 plants per hectare.

YIELD PER HECTARE 80 quintals of grapes approximately.

YIELD PER GRAPE-VINE 1,5 Kg of grapes approximately.

HARVEST Handpicked in mid-September, early in the morning or late in the afternoon, grapes are placed in small trays and kept in cold cells before being taken to the winery.

FERMENTATION Only the best clusters are carefully selected to make this wine. Soft crushing of the grapes is immediately followed by a drop in temperature to favour decanting and removal of the floating substances in the must. Fermentation takes place in temperature controlled steel vats between 13 and 15°C and the wine is left ageing until February of the year following the harvest,

in thermo-controlled steel vats providing a constant temperature of about 10°C in order to preserve the aromas.

SENSORY ANALYSIS

COLOUR Bright yellow with pale golden hues.

BOUQUET Strong full-bodied floral hints of linden and hawthorn with an overall roundness. Wide fruity notes of crispy pome fruits, especially of pear, citron and ripe grapefruit, complete the elegant, fresh and enthralling aromas of this wine that invites to drink more and more.

TASTE Fresh and smartly tangy, this wine is enthralling and dynamic like sea breeze. It fills your mouth with the typical pome fruits of this grape variety.

HISTORY This ancient variety originates in the Adriatic area. Its name (Passerina means small sparrow) might come from the shape of its small bunches with wings and quite rounded intense-yellow grapes that resemble a small sparrow.
