The grapes: 100% - Chiavennasca (Nebbiolo)
The vineyard: the grapes are grown in vineyards in some of the best crus in the Inferno subzone – Carlo Negri, Sopragironi, Sottogironi located in the municipalities of Poggiridenti – trained in the arched variant of the Guyot system (3500 vines/hectare) on terraces exposed to the south with loose sandy soils, at an altitude of 400-450 metres. The yield is 60 quintals/hectare.
Vinification and ageing: the grapes bunches, harvested by hand at the end of October, were vinified on the skins in special temperature-controlled vats and maceration lasted 8 days. After a period in steel vats, the wine was transferred into oak barrels for 24 months, and then bottled.
The wine: Inferno Carlo Negri has a ruby red colour; a distinct and composite aroma with dominant notes of bitter spices (cloves and cinnamon) and dried flowers (roses and violets); a smooth, mellow flavour with a great personality. This wine will unquestionably improve with time to become harmonious and elegant.
Analytical data: 13.80% alcohol; 5.10g/l total acidity; 3.67 pH; 1.00 g/l sugars; 29.00 g/l dry extract.
Optimum conservation: 6-10 years in bottles stored in a cool dark place.
Serving suggestions: roasted red meats, lamb, kid goat, wild game and mature cheeses. Serving temperature: 18°C.
