CLIMATE: The 2022 vintage was characterized by warm and dry winter and spring periods. Starting from the month of June, which is also characterized by the absence of rainfall, there have been peaks in temperature; these climatic conditions did not cause particular stress to the vines thanks to the soil and climatic conditions present in the vineyards of Castello della Sala. The rains of the first days of August rebalanced the situation in the vineyard, guaranteeing the achievement of optimal maturity. The dry climate of this vintage guaranteed the perfect integrity and health of the grapes, making it possible to limit interventions in the vineyard to a minimum and yielding healthy, balanced fruit characterized by a good aromatic profile. The harvest of the Grechetto, the Viognier and the Pinot Bianco for the San Giovanni della Sala began around the last week of August and ended with the Procanico towards the middle of September.

VINIFICATION
Upon arrival in the cellar, the grapes were vinified separately by variety to enhance the varietal characteristics. Part of the must underwent cold maceration, remaining in contact with its skins for about 6 hours at a temperature of 10°C, before being combined with that obtained from the soft direct pressing of the grapes. The must thus obtained was transferred to stainless steel tanks where the alcoholic fermentation took place at a controlled temperature of 16 °C. The wine remained on its lees for a few months in order to improve structure, elegance and minerality until the moment of blending and subsequent bottling.

HISTORICAL DATA: San Giovanni della Sala was born from the vineyards of the ancient Castello della Sala from the union of native Grechetto and Procanico grapes with those of Pinot Bianco and Viognier to tell the Orvieto Classico according to a new style. The first vintage of Castello della Sala Orvieto Classico was 1990.
TASTING NOTES
San Giovanni della Sala has a straw yellow color with slight greenish reflections. The scent is intense: sensations of yellow flowers with citrus notes and white pulp fruit. On the palate the sapidity and softness are supported by a pleasant freshness.
