Vinification: cold stabling of the must, 70% fermentation in steel and the remaining 30% in 15 HL Slavonian oak barrels.

Aging: 6 months in steel, 30% aging in 15 HL Slavonian oak barrels for approx. 4 months Permanence on the yeasts: 180 days

Bottle refinement: 6 months

Sensory profile Anas-Cëtta has a brilliant straw yellow color with golden reflections. On the nose it is fine and elegant, with good intensity; offers complex and persistent hints of wildflowers and aromatic herbs, citrus fruits and exotic fruits. In the mouth, the pleasantness of drinking, the flavor and the minerality that refresh the sip and continue long into the finish, with notes of acacia honey, sage and rosemary, are surprising. Suggestion: Pleasant and with a balanced structure, it goes well with vegetable dishes, white meats, fish and fresh cheeses. Serving temperature: 10 - 12°C.

Notes Anas-Cëtta is a historic wine from the municipality of Novello. Since the first micro-production dating back to 1994, the Elvio Cogno winery, with perseverance and great love for the Langa land, has returned it, from the memories of the elderly people of Novello, to the young people of the third millennium.
