Grape: Cabernet Sauvignon 100%

Wine type: Rosso Sicilia DOC

Soil: Clayey, loose-paked

Yield per ha: 8000 kg/ha

Vine density per ha: 4000 - 4500 plants / ha

Altitude: 150 - 250 m asl

Exposure: Facing south and south east

Vinification: Maceration of the grapes at 22 - 25 °C for 8 - 10 days

Maturation: 3 months in steel tanks at a controlled temperature of 10 °C

Bottle ageing: 3 months

Colour: Quite intense purple that recalls the color of ripe plums

Nose : Red plums and delicate scents of sage, rosemary and eucalyptus

Palate: Strong minerality with soft, fine tannins and intense hints of sage and rosemary

Serving temperature: 16 - 18 °C

Food matching: Roast and red meats, backed spices potatoes, wild games salami, seasoned cheeses

Cellar life: 3 years
