Philippe Bouzereau buys the Pinot Noir grapes for this wine from a small plot of 0.55 ha, located in "Lieu-dit" Les Durots. The vineyard is located in the northeastern part of the commune of Meursault, which mainly produces white wines, but in the fields bordering Volnay (which produces only red wines), it is not uncommon to grow Pinot Noir. Here, at the foot of the slope, the subsoil consists of mixed mountain stone and various clay sediments, which are well suited to this grape variety. Like most of the vineyards of Domaine Philippe Bouzereau, the plot is in transition towards organic cultivation.
The grapes are harvested by hand with a good sorting and transported to the cellar in small 25 kg boxes. to avoid crushing. After a classic destemming of 80-100% of the grapes (depending on the vintage) and a soft pressing, the grapes undergo spontaneous fermentation with the grape's own yeasts in open vessels. The mask is continuously lowered and the must is stirred during the 15 days that the fermentation lasts. After a malolactic fermentation, the wine matures for 18 months in 228 L French barrels. Before bottling, the wine is lightly clarified and lightly filtered, to preserve the fruit and finesse.
The wine has a beautiful glossy ruby red colour. The fragrance offers open and fruity aromas of red berries (currant, raspberry, cherry) and a rather charming crunchy style. The taste is a little darker, but still in the juicy and fruity style. The wine finishes on a good velvet and good bite. The tannin is pleasantly round. However, there is enough structure and fruit for a few years to ripen. As always in Philippe Bouzereau's wines, a discreet and balanced woody character is perceived.
