VINIFICATION: 24 hours of cold maceration, fermentation with natural yeasts at a controlled temperature, below 30 ° C until dry wine and above 22/24 degrees in the subsequent post-fermentation maceration for about a week;
racking and temperature control above 22 ° to favor malotactic fermentation.
AGING: Six months in steel and in bottle.
COLOR: Ruby red with violet reflections.
BOUQUET: Vinous, fresh, floral with hints of black cherry.
TASTE: Full, round.
PAIRING: Wine for the whole meal, it goes well with appetizers of cured meats, first courses of Umbrian and Mediterranean cuisine in general.
EVOLUTION: It is a wine that can evolve in the bottle, if well preserved, for 2-3 years.
