The typical characteristics of Brunello are the great intensity of body and colour, complex and evolved aromas, capacity for long ageing. In the Reserve these qualities have the opportunity to express themselves at their best. This wine is the result of a careful selection that begins with the harvest, continues in the cellar with more prolonged aging in barrels compared to vintage Brunello and ends with a longer refinement in the bottle, before being put on sale.

Vineyards Vineyards of the Fattoria dei Barbi located in the Municipality of Montalcino and registered for the production of Brunello di Montalcino. Terrain: marl. Altitude: 400 m asl. Average age of the vines: vines planted from 1975 to 2017. Exposure: South East. Training system: Free cordon. Stumps per hectare: 5,000. Yield per hectare in quintals: 60.
2017 seasonal trend. Spring 2017 passed substantially in line with the seasonal averages. The growing season began at the usual times and spring was characterized by a mild and very dry April and May, followed by a temperate month of June with no rain. However, a very hot summer followed which actually anticipated the ripening processes of the grapes. The sun warmed up throughout the month of July, causing an initial water stress for the plants. The most difficult moment was in the second half of August, when an anticyclonic wind of African origin began, causing torrid temperatures, well above the average for the period, which lasted for two weeks, accelerating the ripening times of the grapes. At the beginning of September, a few rains rebalanced the ripening times, allowing for an early but optimal harvest.
The harvest took place from 8 to 22 September.
Vinification and Aging The crushed-destemmed grapes have undergone a sudden reduction of temperatures up to 16°C, in a CO2 protected environment. This cooling process of the grape skin allows to obtain a greater extraction of the anthocyanin and polyphenol content. The normal alcoholic fermentation lasted for about 16/17 days at a controlled temperature of 27°-28°C. The racking was followed by malolactic fermentation and subsequently the wine was placed in medium-small capacity wood (2.25 hl – 15 hl) which was followed by the passage into larger capacity barrels.
The Brunello Riserva is aged in wood for at least three years and aged in the bottle for a minimum of 6 months.
Chemical analysis Alcohol 14.50% – Total acidity 6 g/l – Residual sugars < 0.5 g/l – pH 3.25.
Sensory analysis Colour: intense and concentrated ruby red. Bouquet: plum, blackberry, licorice, cocoa, a hint of tobacco. Taste: full, persistent sip, round tannins. Very long finish.
Pairings A wine for special occasions, it accompanies mixed roasts, braised meats, game and tasty, well-aged hard cheeses.
Serving temperature 18°C.
Aging capacity 20-80 years.
Conservation of the bottles Lay down, in the dark and at a temperature of 12°-14°C.
