The Lebrun family planted its first Sauvignon Blanc and Chasselas in the 19th century. Domaine Lebrun has belonged to the same family since 1861. This 9-hectare vineyard located on the hills of Saint Andelain in the heart of the Pouilly-Fumé appellation is now in the hands of Laurent Lebrun.
After having rebuilt the vineyard, the oenologist says that he is now able to "express the purity of this exceptional terroir." Today, the winery, which is about 25 years old, is entirely prepared to work on Sauvignon Blanc. The oenologist checks which vineyards have reached the optimum ripeness for the harvest, which lasts up to a week.
After a slow pressing with the separation of the juice followed by a 24-hour sedimentation, fermentation begins. Fermentation takes place in steel tanks at 18 ° C. The wine is then aged on the lees for 5 months and bottled.
