VINIFICATION
After destemming, the grapes are pressed without being crushed.
From the draining of the grapes, we obtain the free-run must, the most precious part
of the juice. The first fermentation takes place in steel tanks
at a controlled temperature; this is followed by approximately 9 months of aging
in steel tanks, and finally bottling. The second fermentation in the bottle
is followed by at least 30 months of aging on the lees.
The riddling is done manually.

TASTING NOTES
COLOR: intense straw yellow
AROMA: delicate hints of orange blossom, brioche, and white peach
TASTE: fresh and complex, with notes of bread crust, aromatic herbs, and
bergamot. The perlage is pleasant and very fine.
