VINIFICATION
VINIFICATION
After destemming, the grapes are pressed, where they are very lightly
pressed . This produces the free-run must, the most valuable part of the juice.
The first fermentation takes place in temperature-controlled steel tanks;
this is followed by approximately 9 months of aging in steel before bottling.
The second fermentation in the bottle is followed by at least 30 months of aging
on the lees. The riddling is done manually.

COLOR: Bright straw yellow with golden highlights

and a hint of grapefruit. The perlage is fine and continuous.
