Wild Cupreata agaves mature fully in 10-12 years and are highly aromatic compared to other agaves. For this exceptional mezcal, the agaves are prepared the old-fashioned way: roasted for 72 hours in stone-lined earthen pits and fired over wood, then crushed with stone rollers and fermented for up to 7 days in open wooden vats with wild yeast. Distilled twice in copper stills. Color: Transparent fruit with diamond-like reflections. Aromas: Strongly pronounced toasted agave, sweet mango, pineapple, pear, and salted caramel, with hints of light smoke, honey, and thyme. Flavor: Lightly smoky, with a touch of sweet dried mango, peach, and lime blossom. Finish: Warm and long with a pleasant frost, light notes of smoked plums, honey, and apricot jam. We recommend sipping it on its own, snacking on it with an orange, or trying it while mixing cocktails. Perfect with light snacks, salads, and seafood. Great!
