PRODUCTION AND VINIFICATION AREA:
Gaierhof's first sparkling wine is made exclusively with Chardonnay grapes,
hand-picked from high-hill vineyards in Sorni, Pressano
di Lavis, and the Alta Val di Cembra. The climate and significant temperature variations
favor perfect ripening of the Chardonnay,
maintaining the grapes' distinctive acidity and fragrance. After
soft pressing of the whole grapes, the must is cold-settling,
which then undergoes fermentation in
stainless steel tanks at 16°C, with selected yeasts, for approximately
10 days. The aging phase on the lees continues until the following
spring, then the sparkling wine base is prepared for
bottling and selected yeasts are added again
for the secondary fermentation, according to the traditional
classic method, in compliance with the Trento DOC regulations. Siris matures
on the lees for 36 months, thus acquiring structure, elegance, and
complexity.
GRAPE VARIETY:
Chardonnay: it has a rather small,
compact, and cylindrical bunch; the berry is amber-yellow in color, with juicy
flesh and a neutral flavor. It has a medium-sized,
three-lobed leaf.
TASTING NOTE:
Siris sparkling wine has a bright yellow color with greenish reflections.
Intense, fresh aroma with fruity notes of Golden Delicious apples and wildflowers
with an elegant and delicate note of yeast and dried fruit.
Fresh, fragrant, dry, harmonious, and velvety flavor.
Extremely fine and persistent perlage.
FOOD PAIRINGS:
An ideal sparkling wine as an aperitif and to accompany festive
times; excellent as an all-meal wine for fish and shellfish.

6° - 8° C. Uncork just before serving.
