The wine
Born from careful geological and oenological research aimed at enhancing the potential of a new vine for the Italian panorama, Malbec, a grape of French origin that has found a terroir of choice in the "volcanic" Maremma. Balanced, with a marked softness, it embodies all the charm of the production area. The name is dedicated to the Etruscan Vie Cave, deep ways carved into the rock that mark the farm's land.

Vinification
The freshly harvested grapes, destemmed and softly pressed, were transferred to stainless steel tanks. The first phase of maceration, the cold pre-fermentation phase, took place by lowering the temperature between 5 and 10 °C for 3 - 4 days, in order to guarantee the extraction of the aromas and anthocyanins present in the skins. Subsequently, the temperature of the must was gradually raised to allow the alcoholic fermentation to take place, which took place at a controlled temperature of 30 °C; the maceration, managed in a delicate way to allow a controlled extraction of sweet tannins, elapsed in about a week. The wine was transferred to French oak barriques, where malolactic fermentation and subsequent refinement took place, which lasted approximately 10 months. Vie Cave 2021 rested the following months in the bottle before being placed on the market.

Historical data
Fattoria Aldobrandesca is located in Tuscany, in the heart of southern Maremma, in the center of what is known as "the Etruscan area of the Tufi". This wine is dedicated to the "vie cave", Etruscan roads dug into the tuff that deeply furrow the territory of Sovana, as well as the vineyards of the farm, revealing very ancient paths. Tasting notes
Vie Cave 2021 has an intense, almost impenetrable ruby red colour. The nose is enveloping: fruity notes of blackberry, blueberry and black cherry are combined with pleasant spicy sensations of cloves and vanilla; the bouquet is completed by a light note of tobacco. On the palate it is rich and fascinating: velvety tannins support a long and persistent finish, characterized by nuances of bitter chocolate and mint.

Aldobrandeschi farm
Fattoria Aldobrandesca is located in southern Maremma, in the center of what is known as "the Etruscan area of the Tufi". The most widespread image of the Maremma is the "maritime" one, made up of plains and pine forests, horses and cowherds. The Maremma we are talking about, on the other hand, is the internal one, which has the indisputable charm of tuff, a rock on which real strongholds were erected in ancient times - now real open-air museums - such as Pitigliano, Sorano and Sovana. Right at the foot of the tufa spur where Sovana stands, are the vineyards of the Fattoria Aldobrandesca, immersed in a beautiful natural and archaeological panorama.
