A large cuvée built around the territory of Ay.


PROCESSING assembling Approximately 65% of Pinot Noir and 35% of Chardonnay. Pinot Noir comes from our vineyard "Le Léon" in Ay, Chardonnay from Mesnil-sur-Oger and Oger. vinification Part of the wines is vinified in wood and does not undergo malolactic fermentation to preserve all the freshness of the wine and allow it to acquire greater complexity. Ample and acidulous at the same time, this cuvée lends itself wonderfully to a low dosage, “extra-brut”, with only 4.25 g / l, or one third of the classic “brut” dosage of Champagne. aging A time of aging on the yeasts from eight years magnifies this cuvée while allowing it to preserve its original freshness.


TASTING at sight A pink dress with coppery reflections. Fine and lively bubbles. on the nose An expressive and open first nose, in which delicious notes of warm bread and honey intertwine. in the mouth A beautiful richness expressed through accents of honey, caramelized mirabelles and light vanilla. The finish is sour, typical of the vintage.

A TABLE chords The particularly dry character of this “extra-brut” dosed cuvée creates a beautiful pairing with seafood, boiled or grilled fish. Combining it with birds like the capon, you get an interesting dry-fat contrast, and another even more daring can be reached with caviar or very spicy dishes, like an Indian tandoori. However, sweet and sour agreements should be avoided. The Cuvée 1522 has a beautiful breadth, which makes it an excellent table Champagne. Serve fresh but not too cold, at about 8-9 ° C at the aperitif, and 10-12 ° C at the table. conservation After an optimal aging in the cellar, the Cuvée 1522 can be kept for at least ten years in a cool and dark place, thus acquiring greater roundness and complexity.


A confidence

The name of the Cuvée 1522 pays tribute to the year in which the Philipponnat family took root in the village of Ay, in the heart of Champagne.
