VINTAGE 2003 PLÉNITUDE 2
2003 will forever remain the year that changed the history of Champagne. The torrid summer imposed the earliest harvest in the history of Dom Pérignon since 1822, leading the company to interpret this unique year with an approach inspired by intuition and far-sighted choices.

THE NOSE
From the floral softness of the lime emerges the gray minerality, with toasted and ash hints, so characteristic of Dom Pérignon. Then appear aromas of dried fruit, in particular apricot, and then the fruity and candied hint of raspberry and fig. Then, for an instant and unexpectedly, the freshness of fragrant verbena, white pepper and rosemary is revealed, before delving into the darkness of spices and licorice root.

THE PALATE
It is a physical wine. It recalls and involves, in a more tactile and vibrant way than not aromatic. Like a wave, it follows a defined rhythm, until it breaks: first it unfolds, then envelops, in a generous and structured way, and finally it withdraws into a deep and dark verticality, which slowly extends towards a bitter and savory iodized sensation .

THE PATH TOWARDS ETERNITY
Since the creation of each Millesimato, a certain number of bottles are kept aside in the cellars and destined for a longer maturation. Thanks to this additional waiting time, the activity inside the bottles intensifies.
