Geographical location:
Vineyards located on the hillsides facing south, north-east and south-east around the company center on entirely marly
soil.
Number of vines per hectare: 4,500 – 5,000 with double arched (cappuccina) and guyot training.
Harvest: From August 30 to September 10
Winemaking: The grapes are harvested entirely by hand, when perfectly ripe and in the coolest hours of the morning.
They quickly reach the cellar, where the whole grapes are softly pressed. The free-run must thus
obtained, after an initial racking, is placed in fermentation tanks at a controlled temperature.
The wine then remains on its fine lees for at least 8 months and is then bottled 8-9 months after the harvest.
Alcohol content: 13.5°
Acidity: 5.1%
Organoleptic characteristics:
Straw yellow color with greenish reflections, very aromatic and delicate scent. Reminiscent of fresh exotic fruit
such as pineapple, but also peach and sage. Wine with an elegant and velvety flavor, good body and drinkability.
Gastronomy: It goes very well with pasta with fresh vegetable sauces and gazpacho, fish-based dishes such as boreto alla gradese,
octopus or tuna carpaccio, complex dishes with shellfish, cheeses.
It is excellent with all vegetarian dishes and is a valid companion for ethnic cuisine.
