Geographical location:
Vineyards located on the hills around the company center with mainly southern exposure on entirely marly soil.
Number of vines per hectare: 4,500 – 5,000 with double arched (cappuccina) and guyot training.
Winemaking: The grapes are harvested entirely by hand, when perfectly ripe and in the coolest hours of the morning.
They quickly reach the cellar, where the whole grapes are softly pressed. The free-run must thus
obtained, after an initial racking, is placed in fermentation tanks at a controlled temperature. The wine then remains on its fine lees for 6-7 months and is then bottled
8-9 months after the harvest.

Acidity: 4.9%
Organoleptic characteristics:
Straw yellow with greenish reflections, with a strong and rounded taste, with a typical almond and chamomile flower flavor,
notes of wild flowers emerge. It expresses sensations of acidity slightly lower than other wines.
Gastronomy: Ideal with Prosciutto di S. Daniele, its vocation with vegetables is splendid, in particular with early spring
fruits: asparagus, nettle, hops, silene to be used in risottos and omelettes.
It also goes very well with shellfish: cicadas, shrimp, scampi and lobsters because it has the right minerality to enhance their flavor.
