Montefalco Sagrantino Passito DOCG is a sweet, structured wine made from 100% Sagrantino grapes. After natural drying on mats, the wine is aged in French oak for at least 24 months and an additional 12 months in bottle. It has an intense ruby red color and notes of ripe red fruit, spices, tobacco, and jam. On the palate, it is viscous, full, and persistent, with a perfect balance between sweetness and freshness. Perfect with Umbrian tozzetti, red fruit tarts, aged cheeses, and dark chocolate. Aging potential: 25-30 years. Serve at 14-16°C.
GRAPES: 100% Sagrantino grapes.
HARVEST PERIOD: Second and third ten days of October
WITHERING: The grapes are dried, in a naturally ventilated environment, on mats for at least 40 days.
VINIFICATION: Maceration on the skins for at least 10 days with a fermentation temperature between 26 ° C and 28 ° C;
Subsequent aging in small French oak barrels for at least 12 months.
AGING: 30 months in total, provided for by the production disciplinary divided as follows:
12 months in French oak barrels (barriques and tonneaux);
12 months in steel;
6 months in bottle.
COLOR: Intense ruby red with garnet hues.
BOUQUET: Typical hints of ripe fruit with evident notes of jam, dried plum and cherry, all enriched with notes of vanilla, cinnamon and spices typical of the grape.
TASTE: Very ample wine, with great structure, with a long aromatic persistence and a typical tannic finish supported by a pleasant sweetness.
PAIRING: Typical combination with important roast dishes such as lamb and also desserts based on dark chocolate.
EVOLUTION: Wine with great evolutionary capacities in the bottle, it can be refined in the bottle for many years, significantly improving.
