PRODUCTION AREA: Aÿ, Verzenay, Mareuil, Chouilly, Avize.
GRAPE VARIETY: 60% Pinot Noir, 40% Chardonnay
VINIFICATION: Fermentation entirely in barrels. Remuage and disgorgement are done by hand. Maturation in cork, for a cellar rest time more than twice the Appellation regulations. Dosage: 8 g/l.
COLOR: A golden yellow, a sign of the wine's maturity but also of Bollinger's winemaking methods.
AROMA: The nose initially reveals notes of stone fruit, accompanied by Canadian apple, classic plum, and mirabelle plum, along with a hint of honey. Aromas of blackberry, blackcurrant, cherry, and raspberry subsequently emerge: a veritable dance of red fruits intertwined with a hint of almond. The finish features an exotic touch of mango, combined with hints of vanilla and fine oak.
PAIRINGS: Pan-fried foie gras with caramelized apples. Roasted duck breast with raspberry and cranberry sauce. Cantal cheese. Chocolate, raspberry, and anise cream. Serving temperature: 8°C to 10°C.
TASTE: On the palate, the attack is meaty and full-bodied: the mouth fills with hints of mirabelle plum jam. The palate is characterized by a beautiful texture and great richness. The finish combines notes of chocolate and citrus, with a touch of acidity and a hint of schist. A Champagne of great generosity.
