GRAPE VARIETY: 100% Lambrusco di Sorbara
ALCOHOLIC CONTENT: 12%
VINEYARDS: Saliceto Buzzalino vineyard, with clay loam soil (planted in 2005), Albone vineyard with sandy loam soil (planted in 2000).
4000 vines per hectare
PRUNING: simple guyot
VINIFICATION: destemming, crushing and soft pressing, decantation of the must and fermentation in stainless steel or concrete barrels, subsequently refermentation in the bottle
TASTING NOTES: cherry color, pleasant and persistent bubbles, nose of morello cherry, wild strawberry, red currant, marked acidity with a mineral vein.
PAIRING: Excellent as an aperitif, in combination with traditional Modena cuisine, white meat, baked and marinated raw fish.
SERVING TEMPERATURE: 8/12 degrees

VINEYARDS: Saliceto Buzzalino vineyard with clay loam soil (planted in 2005) Albone vineyard with sandy loam soil (planted in 2000)

PRUNING: spurred cordon
VINIFICATION: destemming and pressing of grapes, cold pre-fermentation maceration for 2 or 3 days. Subsequently cleaning and decantation of the must and fermentation in an autoclave
TASTING NOTES: ruby red color with purple reflections, creamy and consistent foam, blackberry and blueberry nose.
PAIRING: Paired with fatty and structured dishes, roasts and braised meats, excellent with pizza.
SERVING TEMPERATURE: 12/14 degrees
