The 2021 vintage was characterized by a generally cold winter and a generally regular spring. At the beginning of April, when budding had already begun, a sudden drop in temperatures caused a significant reduction in production, without affecting the future quality of the grapes in any way, favoring a vegetative delay of about two weeks. A little rainy but at the same time cool May and a summer with sunny days, characterized by a good temperature range between day and night, allowed the vines to recover the accumulated delay and to ensure the correct ripening of the bunches. The good weather starting from August made it possible to carefully select the best grapes, choosing the time of harvest in order to seek the maximum expression of the varietal aromas. The harvest began with the Sauvignon Blanc in the second decade of August and ended with the Sémillon in mid-September. A collection, that of 2021, to be considered of exceptional quality but characterized by a reduced production.

The bunches, harvested manually, were immediately transferred to the cellar and cooled through the passage in a refrigerated conveyor which, by lowering the temperature before pressing, preserved the characteristic varietal aromas. After soft pressing, the musts, kept for a few hours at a temperature of 10 ° C so as to allow their natural clarification, were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature not exceeding 16 ° C. . Once this operation was completed, the wine was stored at a temperature of about 10 ° C to prevent the malolactic fermentation from taking place and to preserve the organoleptic characteristics unaltered. The two varieties were then combined so that one could "complement" the other. Fresh, vertical, slightly aromatic the Sauvignon Blanc, soft and tropical the Sémillon.

Historical data
The vineyards destined for the Conte della Vipera are located at a height ranging from 250 to 350 meters above sea level. on a soil rich in marine fossil sediments. The wine takes its name from the first owners of Castello della Sala and the label shows a design of the 13th century Chapel of San Giovanni located on the property. The first Conte della Vipera vintage produced was 1997.

Tasting Notes
Conte della Vipera 2021 has a straw yellow color with slight greenish and golden reflections. Intense notes of lychee, pineapple and passion fruit combine with pleasant grapefruit sensations on the nose. On the palate it is fresh, taut, harmonious, characterized by good salinity and persistence and an aftertaste that recalls hints of cedar peel and pineapple.
