Tasting Notes
Cherry color tending toward antique pink, surprisingly fruity; reminiscent of white mulberry, yellow melon, and small berries. On the palate, it is full-bodied, persistent, and fresh, with a mineral note that promises longevity. These characteristics make this wine impressive and surprisingly true to its grape variety and terroir.
Winery
The grapes, hand-picked in small crates, are quickly transported to the cellar and manually sorted on a conveyor belt. Destemmed and lightly crushed, they are sent to the press where they are gently pressed. The resulting must is cold-clarified and fermented at a temperature of 15-16°C. Once fermentation is complete, the wine ages on its fine lees for approximately three months.
