“ST”, a Brut nature reborn in a late disgorgement, which is left to refine in the silent cellars for at least 150 months, giving extremely complex and unique sensations. Produced only in excellent years and in limited quantities, it is the expression of a vinification of only Chardonnay grapes, scrupulously selected and suitable for long aging. An extreme refinement without compromises, so as not to alter what nature, with the slow progress of the refinement time, can magically create. It is an exclusive, intense, complex, fine, full-bodied, mature and harmonious wine. It comes out only in strictly numbered series. Ideal to accompany food but also enchanting to savor on its own.

Production area: Rodengo Saiano (BS) at 200 m above sea level.

Land type: Morainic Hills.

Grape variety: 100% Chardonnay.

Alcohol content: 12.5%

Vintage blended: 2010 reserve.

Average age of the vines: 25 years

Density: 5,000 vines/hectare.

Training system: Guyot 8-10 buds per vine.

Harvest: manual in small 16-18 kg boxes.

Country yield: 8,500 kg per hectare (less than 2 kg of grapes and 2 m2 of leaf surface per plant).

Average time between harvest and pressing: 2 hours.

Pressing: soft from whole grapes after further selection of the bunches.

Cellar yield: 5,000 litres/hectare.

Vinification: in supervised thermo-conditioned stainless steel tanks.

Maturation: in stainless steel tanks for 6-8 months from September to April. Minimum 120 months at controlled temperature on the yeasts in the second fermentation, 6 months of further refinement in the bottle.
