VINIFICATION A harvest is carried out by hand in small crates; immediately follows a soft pressing of the whole Chardonnay grapes. After fermentation, the separation from the yeasts takes place and the preparation of the cuvée. Stored in steel tanks, it is bottled the following spring with the addition of selected yeasts. After a stay on the lees for a period between 18 and 21 months, the remuage is carried out and then the disgorgement with subsequent packaging.

VINES Chardonnay grafted on Kober 5BB, planting spacing m 3.20 x 0.80, with Trentino pergola.

PLANT DENSITY 3,000 plants per hectare

CULTIVATION Short pruning, organic fertilization every two / three years, working the soil in alternate rows, only emergency drip irrigation. Vineyards in organic cultivation with ICEA certification.

PRODUCTION Does not exceed 10,000 kg / ha
