Vinification: Soft pressing with pneumatic presses, static decantation of the must, temperature-controlled fermentation (17–19°C) with selected yeasts.
Aging and maturation on the lees in stainless steel tanks for four months.
Prise de mousse: Italian Method in stainless steel autoclaves.
Refermentation Temperature: 15–17°C. Cold tartaric stabilization (-4°C). Microfiltration before bottling to separate the yeast cells from the sparkling wine.
Cycle Length: Approximately 90–120 days.

Organoleptic characteristics:
Appearance: Straw yellow color. Very fine perlage.
Nose: Aromatic aromas, including exotic notes such as passion fruit.
Flavor: A bouquet of flowers that emerge after the rich and creamy perlage. Very persistent.
Food pairings: Excellent with fish-based main courses or fish tartare.
Serving suggestions: Chill to 7-8°C just before drinking. Ideally served with a bucket and ice.
Recommended glass type: A medium-sized white wine glass. It's best to avoid a flute, which, while allowing for an excellent view of the bubbles, prevents the aromas from fully developing and capturing them. The official DOCG glass is ideal.
