The wine
Aleatico, an ancient variety and raisin wine of the Tuscan tradition, finds in this territory a unique expression capable of standing out for its marked personality and softness. The grapes, partly vinified immediately and partly only after a period of drying, express a pleasant freshness and structure while preserving the richness of the typical aromas of the variety.

Vinification
At the time of harvesting, the grapes were divided into two parts: one part was immediately vinified, the other was left to dry for about a month, in dry and well-ventilated rooms, in order to obtain a greater concentration, both aromatic and structure level. The winemaking process was the same for both quotas. After a soft pressing, the grapes were transferred to stainless steel vats where the maceration took place, which lasted about a week in order to extract the aromatic component as well as the typical colour. The fermentation, carried out at a controlled temperature below 20 °C, was interrupted once the desired sugar level was reached by means of a sudden lowering of the temperature. The wine was stored at a low temperature until bottling.

Historical data
The Fattoria Aldobrandesca is located near the historic village of Sovana in southern Tuscany. The first vintage produced is 1997. This wine stands out for its personality, for its pleasantness and for the richness of aromas and flavors typical of the vine.

Tasting notes
The Aleatico 2020 is brilliant, with a ruby red colour. The nose is surprising for its delicacy: hints of wild rose join the fruity ones of cherry and plum. On the palate it is striking for its marked balance between sweetness and freshness, with an aftertaste dominated by the typical varietal notes of rose.

Aldobrandeschi farm
Fattoria Aldobrandesca is located in southern Maremma, in the center of what is known as "the Etruscan area of the Tufi". The most widespread image of the Maremma is the "maritime" one, made up of plains and pine forests, horses and cowherds. The Maremma we are talking about, on the other hand, is the internal one, which has the indisputable charm of tuff, a rock on which real strongholds were erected in ancient times - now real open-air museums - such as Pitigliano, Sorano and Sovana. Right at the foot of the tufa spur where Sovana stands, are the vineyards of the Fattoria Aldobrandesca, immersed in a beautiful natural and archaeological panorama.
