English Harbor is made by Antigua Distillery from molasses. For fermentation, the Antigua Distillery pays particular attention. The fermented 7% alc vol passes to distillation. The Antigua Distillery uses a traditional continuous column which, due to space requirements, has been separated into three parts, as the roof of the distillery is very low. After distillation, a rum with an alcohol content of 95 ° is obtained. Antigua Distillery produces only one mark, which preserves some of the non-alcoholic substances developing during the fermentation process, but the true complexity of English Harbor will be achieved during 10 years of aging in 200-liter ex-bourbon barrels in a tropical climate in the warehouse. of Antigua.

FOCUS
For fermentation, Antigua Distillery pays particular attention to yeasts, in fact yeasts specially selected for English Harbor are used. A basic starter consisting of yeast, water and molasses is first created, further diluted molasses and a portion of yeast is added. Everything is oxygenated and kept under close observation by checking the PH in order to have a regular fermentation. Fermentation takes place in what is called "Bub Tank" at a controlled temperature of 32 ° C maximum. English Harbor is the rum produced by Antigua Distillers Limited, founded in 1933 in St John's Bay in Antigua by 4 local business men. The first alembic installed was a French Savalle column and the raw material was molasses, supplied by the state sugar factory Antigua Sugar Factory and by the small independent sugar factory Montpelier Sugar Factory, which was later bought by them. The distillery mainly produced rum for local merchants, who created blends and commercialized them with their own historical brands, such as Silver Leaf, Red Cock, White House and Borlanda. The first brand owned by Antigua Distillers was Cavalier Muscovado, also produced in a light version, still existing today under the name of Cavalier Antigua RUm. In 1991 the Savalle column was replaced by a continuous triple John Dore column. In 1994 English Harbor was born in honor of the bay in the south of the island, where the ships of the British Navy stopped, on board of which the daily "Tot" of rum was distributed.
