Tomino is perhaps a little-known cheese, but in terms of goodness it has absolutely nothing to envy to others that are much more well-known and advertised.

Tomino has only been considered a typical Piedmontese cheese for a very short time, in fact only recently have Italian dairy scholars taken it into consideration both for the extent of production and for the qualitative qualities.

“Tomino” literally means “little Toma”, even if the two cheeses have nothing in common except the region of origin: Piedmont.

The name derives from the Piedmontese term “tuma” which means fall and which would indicate the precipitation that casein undergoes due to the action of rennet. In the Piedmontese dairy, Tomino is a very important product not only from a quantitative and qualitative point of view but also from an economic and social point of view.

Tomino is eaten mainly fresh and comes in the form of a small disc, with flat faces with a diameter of 4-8 cm and a side of 1-3 cm with a white, porcelain, soft and crumbly texture, with a sweet and delicate flavor. acidulous and pleasant.

It can also be subjected to a short maturation of 15-30 days during which a very thin crust is externally formed covered with white mold while the flavor becomes stronger and more aromatic.
