The licorice roots remain in infusion for forty days in the soft aged grappa and are continuously stirred to give the distillate the most intense and persistent notes of the herbaceous plant. The result is overwhelming and the alcoholic impact is mitigated by a low alcohol content, even more pleasant through a cold tasting.
