WINEMAKING DATA
CLASSIC METHOD
WHITE VINIFICATION: The Fiano destined for the production of Brut Contadino is harvested
slightly early to preserve the crisp fruit and maintain its pleasant acidity. The harvested grapes
are placed in the pneumatic press, separating the first and second pressings. Natural fermentation begins at
room temperature in stainless steel tanks. The partially fermented
must is cold-decanted and bottled. The bottles are corked with
crown caps and laid horizontally for the second fermentation and secondary fermentation.
AGEING: The stacked bottles are aged for at least 24 months before remouage. Subsequently,
they are disgorged and corked with a mushroom cork and wire cage. After disgorging,
further maturation takes place for at least three months before the Brut Contadino is released to the market.
