TYPICAL SWEET WINE FROM ROME - PERFECT WITH ROASTED CHESTNUTS.
Cagnina, not to be confused with Canina, a native grape grown in the Ravenna area, likely originates from Istria, transplanted during the Byzantine era when large shipments of limestone arrived from Dalmatia to build Ravenna's imposing monuments.
It is most likely the Refosco grape, identifiable by its characteristic red stem, locally called Terrano.
Its amusing name seems to derive from the fact that the dogs that followed the farmers to work in the vineyards enjoyed nibbling on the particularly sweet bunches of grapes.

WINEMAKING TECHNIQUE
Vinification is carried out with maceration of the grapes and controlled fermentation and temperature under the careful supervision of a team of winemakers.
