Soil composition Of morainic origin, it shows a good presence of skeleton on calcareous rocks. The texture is of medium texture with a good supply of clay; an organic fertilization every four years is the only intervention of natural integration.

Vinification Harvest by hand in small crates - soft pressing of the whole bunches - first fermentation partly in steel, partly in small oak barrels (about 15% of the base wine).
Second fermentation The second fermentation takes place with the traditional classic method in the month of June following the harvest.
Disgorgement The disgorgement operation is carried out after the wine has matured in contact with the lees for at least 24 months. Reference vintage indicated on the label.
Residual sugar Maximum 6 grams/litre - BRUT.
